Prep Time: 5 minutes Cook Time: 30 minutes Serves: 6
Directions:
1. Fill small pot with 2 cups water, bring to a rolling boil, add 1 1/2 cups of white quinoa. Continue rolling boil until quinoa has fully expanded and becomes fluffy. Water should have been completely absorbed.
2. In a skillet, fry 2 links of sweet italian sausage until cooked through, the links should be firm and browned.
3. Dice tomatoes, mince garlic, and chop basil.
4. Roughly chop sausage links, let crumble.
5. In a medium serving bowl, add quinoa,sausage, tomatoes, garlic and basil. Grate parmesan cheese over the mixture. Squeeze lemon juice and add salt and pepper to taste.
Serve warm or chilled.
